Shrimp a la Grecque
This dish consists of quickly sautéed
shrimp in olive oil tossed with fresh garden
tomatoes, artichoke hearts
& feta cheese and is served on pasta. Its freshness and flavors
conjure up images of azure seas and blue Mediterranean skies. It is our
dish at the Cottage Inn.
1 lb. peeled and deveined shrimp
1 Tbsp. chopped garlic
2 Tbsp. olive oil
1/4 cup chopped fresh tomatoes
1/2 cup chopped canned artichoke hearts
1 Tbsp. chopped fresh parsley
1/2 cup crumbled feta cheese
1/2 lb. cooked Capellini pasta
Oregano - fresh or dried
Heat olive oil, add garlic, then shrimp.
Cook quickly. Add tomatoes, artichokes, parsley
and feta. Squeeze lemon
over pan. Divide pasta on warm plates and spoon shrimp over
Sprinkle oregano on dish and serve with lemon garnish.
